Roasted Cajun Turkey

Ingredients

  • 1 16 lb. Fresh Young Turkey
  • 1/4 cup softened butter
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon dried garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried paprika
  • 1 tsp Cayenne pepper
  • 1 tsp chipotle chili pepper
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tablespoon Truvia® Brown Sugar Blend or brown sugar
  • 2 tablespoons melted butter
  • 1 green pepper, coarsely chopped
  • 1/2 onion, coarsely chopped
  • 2 celery stalks, chopped
  • 2 cloves of garlic
  • 2 tablespoons chopped fresh parsley
  • 1 bay leaf
  • 1 14 oz. can turkey or chicken broth

  • Step 1

    Preheat the oven to 325°F. Lightly coat the rack of a roasting pan with non-stick spray and set aside.
  • Step 2

    Remove the giblets and the neck from the turkey cavity, set aside, and pat the turkey dry with a paper towel. Place the turkey, breast side up, on the roasting pan.
  • Step 3

    In a small bowl, combine the thyme, oregano, garlic powder, onion powder, paprika, cayenne pepper, chipotle chili powder, salt, pepper, and Truvia Brown Sugar Blend. Combine the seasoning mixture (reserving 1 tablespoon, set aside) with softened butter.
  • Step 4

    Cut a pocket between the skin and the breast meat. Work the butter mixture in the pocket, working it in between the legs and wings as best you can.
  • Step 5

    Drizzle melted butter over the outside of the turkey and sprinkle remaining seasoning mixture over butter. Spread this over the outside of the entire turkey.
  • Step 6

    Place chopped green pepper, onion, celery and garlic inside the turkey cavity. Pour chicken broth into the bottom of the pan.
  • Step 7

    Tent a sheet of aluminum foil over the turkey and place the turkey in the oven. Keep turkey loosely covered during the cooking time. Turkey should take 4-4.5 hours or until a meat thermometer inserted into the thickest part of the breast reads 165°F.
  • Step 8

    Remove turkey and allow it to rest for 20 minutes before carving.
