- I package of Honeysuckle White® Bone-in Turkey (thighs, wings, drumsticks, bone-in turkey breasts, etc)
- 1 tablespoon Diamond Crystal® Kosher salt (use 2 tablespoons if using another brand)
1. Sprinkle the salt under the skin. Place it in the refrigerator, uncovered, on a pan for 24 to 48 hours.
Leaving it uncovered will dry the skin, which will help you achieve a crispier skin when cooked.
2. When it comes time to cook the turkey, season it with the rest of your seasoning but do not add any more salt.
Note: You can add your seasonings to the salt in the brining step and have it completely seasoned in one step
