Turkey Sausage Peppers & Onions with Creamy Polenta

Ingredients

  • 1 cup medium or coarse polenta
  • 1/4 teaspoon dried thyme
  • Freshly ground black pepper
  • Cooking spray
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 cup shredded fontina cheese
  • 4 Hot Italian Sausages
  • 1 large white or yellow onion, thinly sliced
  • 2 medium green peppers, seeded and cut into 1/2-inch wide strips
  • 2 medium red peppers, seeded and cut into 1/2-inch wide strips
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • Grated Parmesan cheese

  • Step 1

    Cook polenta according to package instructions.
  • Step 2

    When polenta is cooked, take it off the heat and add thyme, pepper, fontina and olive oil, and stir until melted and very creamy; keep warm.

    Heat a large, preferably nonstick, skillet and coat with cooking spray.
  • Step 4

    Place the sausages in skillet and cook over medium-high heat, until brown on each side, about 5 minutes per side, then add 1/4 cup of water and cover, turning heat to medium-low. Cook for another 5 minutes.

    Take sausages out of pan and place on a cutting board to cool. When cool, cut sausages into 1/2-inch diagonal slices.
  • Step 6

    Pour liquid out of the skillet, then add the remaining tablespoon of olive oil, onions and peppers; cook over medium-high heat until softened, about 7 minutes.

    Add the sliced sausages and garlic to the pan; stir and cook for 2 minutes.
  • Step 8

    Deglaze the pan with wine and simmer until liquid is reduced to just a few tablespoons.
  • Step 9

    Spoon polenta onto plates, top with the sausage mixture, sprinkle with Parmesan cheese.
