Thai Style Turkey Sliders with Red Curry Mayo

- 1/2 cup mayonnaise
- 1 tablespoon Thai red curry paste
- 8 slider buns, toasted
- 16 dill pickle slices
- 5 tablespoons Thai sweet chili sauce

Step 1Prepare the sliders. Divide the ground turkey into 8 equal balls. Shape each ball into a patty approximately 3" across or about the size of the slider buns. Cover and refrigerate until needed.
Step 2Prepare the red curry mayonnaise. Combine the mayonnaise and Thai red curry paste in a small bowl. Using a rubber spatula or whisk, stir well until combined.
Step 3Season the sliders with salt and pepper as desired. On a grill or in a sauté pan, cook over medium heat for 5-8 minutes or until an internal temperature of 165°F is reached on a meat thermometer.
Step 4As the patties cook, spread the red curry mayonnaise on the tops of the slider buns. Place the pickles on the bottom half of buns.
Step 5When the sliders are cooked, remove from heat and place on the bottom buns. Drizzle the Thai sweet chili sauce on top of the patties and add the bun tops.
