- Or, 1 package Turkey Breast Cutlets
- 1 tablespoon vegetable oil
- 1 yellow onion, 1/4" dice
- 1 red bell pepper, 1/4" dice
- 3 garlic cloves, finely minced
- 3/4 cup dry white wine
- 1 28-ounce can of diced tomatoes
- 1 cup chicken broth
- 1 1/2 teaspoons of dried Oregano
- 1/4 cup fresh basil, chopped

Step 1Heat a large sauté pan or skillet over medium-high heat. Add vegetable oil. Once hot add the turkey breast tenderloins. Cook for 5 minutes, then add onions, peppers and garlic to the pan.
Step 2Add the white wine to deglaze the pan, making sure to scrape the brown bits of turkey.
Step 3Add the diced tomatoes, chicken broth and oregano, allow to simmer for 20 minutes. Add the fresh basil and cook until the strips reach a minimum internal temperature of 165°F.
Step 4Serve with mashed potatoes, polenta or rice.
